Ghost chili (Bhut jolokia) is a type of chili pepper grown in the Indian states of Assam, Manipur, Nagaland and Arunachal Pradesh. It is one of the hottest chili peppers in the world with Scoville heat units up to 1000,000. and sometimes even more.
If you have got a spicy tongue and wish to taste this super-hot pepper, then here is the recipe for ghost pepper hot sauce (make sure you protect your hands with gloves while chopping the chilies).
- Chopped ghost peppers – 6 -7 (you can adjust the number to suit your heat preference)
- Small onion, diced – 1
- Tomatoes, chopped – 2
- Water – ½ cup
- Salt – 1 Tsp.
- Olive oil – 1 Tbsp.
- Red wine vinegar – 2 Tbsp.
Heat olive oil in a thick bottomed pan, add onion and pepper and stir for a minute. Add the chopped tomatoes and stir again. Let it cook for around 10 minutes. Now add salt, red wine vinegar, and water. Simmer it for about 20 minutes. Switch off the stove and let the mixture cool. Put the mixture in a blender/food processor and blend till the mixture is smooth. Your ghost pepper hot sauce is ready. Transfer the sauce into an air tight bottle and refrigerate.
