Trinidad Scorpion Patatas Bravas

2 russet potatoes, peeled and cut into 1-inch cubes

2 cups oil

tablespoon salt

1 tbsp olive oil

1 teaspoon salt

1 tsp lemon juice

1 tsp tomato paste

2 cloves garlic, minced

2 tsp Cranky Rooster Trinidad Scorpion Hot Sauce

1 tsp smoked paprika

1/4 cup mayonnaise

sprinkle of cayenne pepper
sprinkle of fresh chopped parsley



Bring a pot of water to a boil. Season the water with salt and some cayenne pepper. Boil the potatoes for about 10-12 minutes, just until they're tender, but not quite done.Drain the potatoes under cool running water and set them on a sheet pan lined with a towel to dry. Meanwhile you can make your aioli. In a small bowl, mash the garlic, paprika, and hot sauce with a wooden spoon aggressively to make a paste. Mix in the mayonnaise, tomato paste, and lemon juice. Refrigerate the sauce. Heat the oil in a pot over medium high heat and ensure the potatoes are dry, tossing about in the towel. Fry the potatoes in small batches and drain on a paper towels. Season with salt and pepper and serve hot with the chilled spicy aioli and a sprinkle of parsley.
